Ingredients

  • pork ribs - 24.5 oz (700 g)
  • black pepper
  • salt
  • thyme - 1 tsp
  • salvia - 1 tsp
  • paprika - 1 tbsp smoked
  • cayenne pepper - 1 tsp, flakes
  • honey - 2 tablespoons, runny
  • olive oil - 2 tbsp (30 ml)
  • garlic - 1 clove
  • red wine - 1 cup
  • potatoes - 17.5 oz (500 g) fresh

How to make

Cut the ribs into pieces. Put all of the spices, olive oil, honey and mashed garlic in a bowl. Stir. Clean the potatoes and cut them in half.

In a tray, arrange the ribs, potatoes and pour on the mixture of spices, distribute it over the potatoes as well. Rub it into the meat with your hands and stir. Pour in the wine and cover with aluminum foil.

Put in a preheated 320°F (160 °C) oven for 1 hour 20 min., then remove the foil, turn the heat up to 370°F (190 °C) and bake another 10 min. until the meat gains a nice crisp.

Serve the ribs with potatoes sprinkled with fresh parsley.

Note: You can cover the tray with a suitable lid if you're worried about the dangers of aluminum foil.
