How to make
Peel and cut the cucumber into pieces. Peel the onion and cut it into thin crescents. Mix the yoghurt with the olive oil, salt, black pepper and parsley.
Add the cucumber and onion to the yoghurt mixture and stir.
Leave covered with foil in the fridge to cool for 1 hour. Stir again before serving.
It's a very nice, fresh salad that I highly recommend.
