How to make
Wash and clean the wheat, then soak it in water for a few hours. Put it to boil in the same water on low heat.
Set aside 2/3 of the wheat, pass it through a sieve and pour on the water used for boiling. Put the resulting mash to come to a boil and add the starch that you've diluted with a little cold water and the sugar.
Add the remaining 1/3 of the wheat, boil on low heat until thickened. Finally, mix together with the raisins and rose water.
Distribute the ashure into bowls, sprinkle with crumbled walnuts and cinnamon.
