How to make
Parboil the tripe in boiling water for 3-4 min. and immediately grate (clean) its inside with a knife.
Then clean it on the outside as well, remove the membrane. Wash it, put it in a pot and pour cold water over it.
Boil it, while constantly topping off with water. Boiling it takes about 3 hours. While the tripe is boiling, you have to keep it covered with water.
Take the boiled tripe out of the pot and chop it into pieces, salt the broth and boil it another 15-20 min., while also adding the paprika, milk and oil to it.
Upon serving, put some of the tripe in a bowl and pour the hot broth over it, along with mashed garlic and vinegar.
Serve with chili peppers if desired.
