"Start the day off with a smile, enthusiasm and Pigs in a Blanket with Eggs and Feta Cheese."

Ingredients

  • phyllo pastry - 9 sheets
  • vienna sausages - 4 - 5
  • eggs - 5
  • feta cheese - 10.5 oz (300 g)
  • oil - 1 cup, or butter
measures

How to make

Cut each Vienna sausage in 2 and then lengthwise. Beat the eggs, add the crumbled feta cheese and stir well. Take 1 phyllo pastry sheet out and smear it with oil. Sprinkle it with part of the egg mixture.

Place a piece of Vienna sausage on 1 short side and another on the other short side. Cover the Vienna sausages with the 2 longer sides.

Smear with a little oil and start rolling up the Vienna sausage sides toward the middle until they meet. Sprinkle a little of the filling in the middle.

Repeat this for all of the sheets and products. Arrange them in an oiled tray. Smear with the beaten egg, sprinkle with spices of your choice and bake at 360°F (180 °C) for about 25-30 min.

Credit goes to Margarita Dimitrova for the idea.
