Ingredients

  • eggplants - 2
  • tomatoes - 17.5 oz (500 g)
  • peppers - 17.5 oz (500 g) red and green
  • garlic - 4 cloves
  • red onions - 1 small head
  • olive oil - 3 tbsp
  • vinegar - 1 tsp
  • salt
  • black pepper

How to make

Wash the vegetables.

Turn on your grill or oven. Put the peppers and eggplants to bake on both sides.

After the peppers are baked, smother them in a plastic bag, to make them easier to peel. Peel the peppers and eggplants.

Grate the onions on a grater and drain them, do the same for the garlic.

Put the eggplants, peppers and tomatoes through a meat grinder or mash with a hand blender.

Mix the veggies in a bowl with the olive oil, a little vinegar, salt and black pepper to taste.

Notes: I recommend cooking the veggies on a grill or coals. It's best to have both types of peppers but you can have all red or all green.

I used home-grown garden tomatoes. You can braise the tomatoes with the garlic and onions but personally I don't recommend frying.
