How to make
Dissolve the yeast in the warm water and add the sugar and 1 tbsp flour. Leave the yeast to rise.
Sift the flour and make a well. Break the eggs but set aside 1 yolk for smearing. Add the yeast and warm milk. Add the salt and oil and knead a soft dough. Cover the dough with a clean towel and leave it in a warm area to rise.
Divide the ready dough into 4 balls. Stretch out each ball into a wick. Smear each wick with oil. Sprinkle seeds on the counter and twist the wicks on top of it. Wrap 1 wick into a spiral and place it in the middle of the oven dish you intend to bake.
Twist the other 3 wicks and wrap them around the central spiral. Smear the loaf with a beaten egg yolk and sprinkle with seeds. Leave it to rise again.
Bake in a moderate oven until golden.
Sprinkle the ready loaf with water and cover with a clean towel.
