How to make
Cut the bacon into cubes, set aside 2 oz (50 g) of it. Toast the rest of it in a pan with a nonstick coating to a brown crisp, put it onto paper towels for them to absorb the excess oil.
Cut the old bread into small cubes, put them in a deep bowl. Separately, beat the eggs with a fork, add the milk, black pepper to taste and the salt, stir.
Pour the mixture over the bread cubes and stir lightly.
Grate the cheese on a grater, add 2/3 of it to the other mixture, along with the crispy bacon and stir once more. Leave it to sit as is while the oven heats up to 390°F (200°C).
Smear a round cake form with the butter, pour the mixture into it, then sprinkle on the set aside bacon and grated cheese. Cover the form with aluminum foil, put it in the preheated oven. After 30 min. of baking, remove the foil and bake to a nice crisp.
Cut the salty cake into slices and serve warm.
