How to make
Dissolve the yeast in the warm water with the sugar and several tbsp flour. Once it bubbles, add it to the flour and remaining ingredients. While gradually adding flour, knead a soft dough, leave it to rise well.
Once it swells well, take it out of the container and shape it into a roll by kneading with your hands lightly while sprinkling flour to prevent it from sticking. Divide it into 5 balls and begin rolling each one of them out in the form in which you'll be baking.
Butter the form and place the 1st sheet. Sprinkle with feta cheese and chopped pieces of butter here and there. Keep arranging in this order until you've place the last sheet. Cut it with a sharp knife, being careful not to squish the dough too much when pressing down. Put butter on top only.
Leave it to sit in a 120°F (50 °C) oven. Once it rises, increase the heat to 360°F (180 °C). Bake to a nice crisp. Take the Tutmanik out, sprinkle it with water and cover with a towel.
