Ingredients

  • bulgur - 1 1/5 cups (300 g)
  • parsley - 4 bunches, finely chopped
  • tomatoes - 2, peeled, seeds removed, finely chopped
  • cucumbers - 1, cut into small cubes
  • lemons - 2, juice
  • onions - 1 head, very finely chopped
  • olive oil - 2 tbsp
  • salt - to taste

How to make

Pour 1 cup hot water over the bulgur and leave it to swell for 1 hour.

Drain it carefully and add the parsley, tomatoes, cucumbers and onions.

Season with the salt and olive oil and stir. Optionally, pour the juice of 1 lemon over the salad.
