How to make
Grind the biscuits and cashews using your preferred method. Mix them with the melted butter and form a layer along the bottom and sides of a cake form. Return to the fridge for 1 hour.
In the meantime, put the mascarpone, sour cream, milk, sugar and lemon rind in a chopper. Mash to obtain a cream. Lay it out over the layer and return to the fridge.
Clean and wash the strawberries. Halve them and put them in an enameled container. Sprinkle them with sugar and wait 2-3 hours. Then heat them on a low stove and stir for about 10 min.
Take the mixture off the stove and leave it to cool. Combine with the gelatin, prepared according to packet directions, then stir well.
Give the mixture time to cool some more and then cover the cheesecake with it. Return to the fridge for 7-8 hours before serving.
