How to make
Roast, peel and clean the peppers from their seeds. Heat a little oil and break the eggs in it. Stir until slightly thickened.
Transfer the eggs to a bowl and stir with the crumbled feta cheese. Add the finely chopped parsley, garlic and stir again. Cut the peppers lengthwise from one side and open them up.
Put filling in one side and close with the other. Prepare 3 separate bowls, one with breadcrumbs, flour and eggs. Roll each pepper in flour, then beaten eggs and finally in breadcrumbs.
Put them in a platter, and right before frying, dip each one in beaten eggs once again. Fry on both sides and take them out onto paper towels. Serve with your favorite salad!
