"Sometimes I feel like eating something a little different - light on the stomach and tasty. That`s when I make this zucchini dish."

Ingredients

  • mince - 17.5 oz (500 g)
  • rice - 1 1/5 cups (300 g)
  • zucchini - 3
  • carrots - 2
  • onions - 1 head
  • garlic - 3 cloves
  • eggs - 4
  • milk - 2 cups (500 ml)
  • flour - 2 tbsp
  • oil - 1 1/2 cups
  • salt
  • black pepper
  • dill
  • parsley

How to make

Cut the zucchini and carrots into cubes after you've peeled and washed them.

Braise the diced onions in a pan in half the oil, add the carrots, zucchini and chopped garlic. Braise for 10 min. while stirring.

Transfer them to an oven dish, pour the rest of the oil in the pan and braise the mince until whitened.

Add the washed rice and stir for 5-6 min.

Sprinkle with chopped parsley and pour a cup of warm water over it.

Once the water is absorbed, transfer them into the oven dish with the zucchini, stir and pour on another 1 cup of water.

Bake in a moderate oven. Once the water is absorbed, pour on the whisked eggs, milk and flour, which you've mixed beforehand. Bake until it gains a golden crust, sprinkle with chopped dill.
