Ingredients

  • biscuits - 5.5 oz (150 g), crumbled
  • walnuts - 1 2/3 tbsp (25 g), ground
  • butter - 1/3 cup (75 g)
  • cream cheese - 1 cup (250 g), Philadelphia
  • mangoes - 2
  • eggs - 2
  • gelatin - 2 tsp (10 g)
  • cream - 2/3 cup (150 g)
  • powdered sugar - 2 tbsp

How to make

Mix the crumbled biscuits with the walnuts and melted butter. Distribute the mixture along the bottom and sides of a form and put it in the fridge.

Soak the gelatin in several tbsp of water in order to swell and melt it in a water bath. Peel the mango and chop it finely.

Mix the cream cheese with the sugar, half the mango, egg yolks and gelatin. Beat the mixture until you get a fluffy cream.

Beat the egg whites to stiff snow. Carefully add them to the cream cheese with the rest of the mango. Stir the resulting cream lightly and distribute it onto the cake layer. Once the cake cools, decorate it with the cream beaten with the powdered sugar.
