Today I have a quick flourless keto dessert for you, which is prepared in no more than 10-15 minutes.
Grind the almonds very finely or use almond flour.
Beat the eggs and add the sweetener.
Finely grate the peel of half a lemon, but only the yellow part.
Add it to the eggs along with the rest of the products (ground almonds, coconut shavings, coconut flour and baking powder).
Finally, add the frozen blueberries and mix.
Line the bottom and sides of a 7″ (18 cm) baking pan with baking paper, then transfer the cake mixture and level it out.
Put the fruit cake to bake in a preheated oven at 360°F (180°C) for about 25-30 minutes, until it is fully baked.
Once the cake is ready, remove it from the baking pan and cool it on a wire rack.
