How to make
Remove the seeds from the peppers. Bake them however you like - the oven is easiest. Cover with a lid in a pot briefly and then peel.
Put them to drain and beat the eggs with the flour until you get a thick mixture. Optionally, sprinkle with black pepper and salt. Dip each pepper in the mixture before you put it in heated oil. Fry until golden.
Serve with tomato sauce or other garnish of your choice.
