How to make
Knead a soft flour from the sifted flour, egg, salt and a little water. Once ready, roll out the smooth dough and cut out circles using a glass or ravioli maker.
Fill the circles with a stuffing of your choice - smear each circle with beaten egg yolk, put stuffing in the middle, a second circle on top and pinch the edges together.
For the ravioli stuffing you can use leftover boiled or roasted meat - grind it, braise it in oil with chopped onions. Season with salt, black pepper and mix with 1 egg.
Once formed, place the ravioli in slightly salted boiling water and boil about 5-10 min. You can serve them with a soup or sauce of your choice.
