Ingredients

  • flour - 2 lb (1 kg)
  • milk - 1 cup
  • yeast - 2 4/5 tbsp (42 g), baker's
  • salt - 1 - 2 tsp
  • sugar - 1 pinch
  • mayonnaise - 4/5 cup (200 g)
  • water - 2/5 cup (100 ml)
  • eggs - 1 yolk
  • feta cheese - 5.5 oz (150 g), crumbled
  • cheese - 5.5 oz (150 g), grated
  • sesame seeds - or poppy seeds

How to make

Pour the flour into a large bowl. Add the yeast that's been diluted in the warm milk. Add the salt and sugar. Add the water also, then the mayonnaise.

Stir with a wooden stirrer and knead a dough for about 10-20 min. After it rises, divide it in 2.

Roll them out with oiled fingers. Put crumbled feta cheese, cheese and a little oil in the middle. Wrap them into loose rolls.

Tie the ends together by twisting them. Place the resulting twisted loaf in a greased glass cook pot or oven dish. Smear it with egg yolk and sprinkle with sesame or poppy seeds.

Bake the twisted loaf in a preheated 360°F (180 °C) oven. After it's baked, sprinkle it with cold water and wrap it with a towel. Serve while still warm.
