How to make
Cut 2 of the peaches into cubes and the rest into thin strips. Sprinkle with lemon juice to prevent them from darkening.
Beat the eggs and sugar with a mixer until the mixture becomes fluffy. Add the yoghurt, flour (pre-sifted with the baking powder and vanilla). Finally add the cubed peaches, stirring carefully.
Lay out a form with baking paper and brush it with butter. Pour in the mixture, smooth it out and stack the remaining peaches on top. Bake the loaf in a preheated 360°F (180 °C) oven for 35-40 minutes, check to see if it's ready with a toothpick.
Allow it to cool and sprinkle it with powdered sugar. If you want the loaf to become even more juicy, you can smear it with caramel syrup or compote juice.
