Ingredients

  • bell peppers - 11 lb (5 kg)
  • carrots - 6.5 lb (3 kg)
  • cauliflowers - 5.5 lb (2.5 kg)
  • pears - 3.5 lb (1.5 kg)
  • celery - 2 heads + stalks and leaves
  • grapes - 3.5 lb (1.5 kg)
  • green tomatoes - 6.5 lb (3 kg)
  • for the marinade
  • vinegar - 4 1/5 cups (1 liter)
  • water - 1.5 gal (6 liters), boiling
  • salt - 1 tsp per jar
  • sugar - 1 tablespoon per jar
  • aspirin - 3 per jar
  • allspice - 2 - 3 grains per jar

How to make

Cut the cleaned vegetables and fruits into bite-sized pieces, leaving the grapes whole. Prepare compote jars, fill them with the fruits and vegetables.

Put 1 tsp salt, 1 tablespoon sugar, 3 aspirins and 2-3 allspice grains in each jar. Prepare a boiling marinade of vinegar and water and add it into the jars. Stuff celery leaves and stalks on top.

Close the jars immediately and flip them over. Throughout the next 7-10 days, shake the pickles every other day.
