"A syrup cake needs to be juicy, melt-in-your-mouth. Notice - no mention of eggs anywhere."

Ingredients

  • flour - 1 cup fine
  • corn flour - 1/2 cup
  • brown sugar - 1 cup
  • baking soda - 1 teaspoon
  • salt - 2 pinches
  • vanilla - 1 packet
  • water - 1 cup
  • butter - 5 tablespoons
  • lemon juice - 5 tablespoons
  • for the syrup
  • water - 1 1/5 cups
  • sugar - 2/3 cup

How to make

Sift both types of flour and mix them with the baking soda, sugar, salt and vanilla. Mix, add the water and lemon juice. Continue stirring until you get a homogeneous mixture.

Pour the mixture in a rectangular, well buttered, floured oven dish. Bake until ready in a preheated oven. While the cake is still in the oven, prepare the syrup for it.

Boil the water and add the sugar. Stir over low heat until the syrup thickens. Then cut the cake into pieces and pour the syrup over it.

Cool for several hours and serve.
