How to make
Cut the vegetables into slices and salt the eggplants. Leave them as is to drain off the bitter juice, then wash them.
Arrange them in an oiled oven dish, alternating between them.
Blend the garlic cloves, mix them with the salt and spices and sprinkle on top of the vegetables.
Heat the oven to 360°F (180 °C) and bake the tian until ready.
