How to make
Put the cottage cheese in a cheesecloth and press it between 2 boards to strain the excess whey.
Then pass it through a coarse sieve, add 1 1/3 tbsp (20 g) of butter, the cream and egg yolks from the eggs.
Salt and stir very well. Gradually add the egg whites, whipped to snow, and then the 2 types of flour.
Pour the resulting mixture in a buttered pudding form that you've sprinkled with breadcrumbs ahead of time. Bake in a preheated 360°F (180°C) oven for about 20 to 25 min. or until a toothpick comes out dry when used to poke the pudding.
Serve the pudding with cream or ice cream.
