"Oven-baked eggplant with tomato sauce and cheese is all you need for lunch."

Ingredients

  • eggplants - 20 oz (550 g) or 2 medium - sized
  • carrots - 2
  • celery - 3 stalks
  • pork sausage - 3 pcs.
  • tomato puree - 0.9 lb (400 g) canned
  • diced tomatoes - 0.9 lb (400 g) canned
  • onions - 1 onion
  • garlic - 2 cloves
  • oil - 1.7 fl oz (50 ml)
  • savory herb - 1 tsp.
  • paprika - 1 tsp.
  • black pepper - 1 tsp.
  • sugar - 1 tsp.
  • salt - 2 tsp.
  • cheese - 5.3 oz (150 g)

How to make

Clean and dice the eggplants and carrots. Heat the oil in a pot and add the onion for about 2 minutes, then add the eggplants and carrots.

Add salt, savory, paprika, black pepper and finely chopped garlic.

Cook for about 5 minutes, stirring occasionally. Add the tomatoes (cubes and a tin of tomato sauce), celery, pork sausages and sugar.

Cook until the sauce thickens over medium heat.

When the eggplant dish is ready, with the tomato sauce well thickened, transfer everything into a baking pan, add grated cheese and bake in a preheated oven at 180°C.
