"Very fluffy and juicy chocolate cake with mint flavor."

Ingredients

  • flour - 8.1 oz (230 g)
  • sugar - 3.2 oz (90 g)
  • butter - 3.5 oz (100 g)
  • yolks - 3
  • egg whites - 3
  • mint syrup - 15 tbsp.
  • baking powder - 1 tbsp.
  • salt - a pinch
  • For the cream
  • mascarpone - 1.1 lb (500 g)
  • confectionery cream - 7 oz (200 g)
  • powdered sugar - 3.5 oz (100 g)
  • mint syrup - 3 - 7 tbsp. (to taste)
  • For the glaze
  • sugar - 4 tbsp.
  • cocoa - 2 tbsp.
  • milk - 4 tbsp.
  • butter - 1.1 oz (30 g)
  • chocolate - 1.8 oz (50 g)

How to make

Beat the butter with the sugar.

Add the egg yolks and mint syrup.

Add the sifted flour, a pinch of salt and baking powder.

Beat the egg whites until stiff, add to the mixture in parts, stirring carefully with a spatula until a homogeneous batter is obtained.

Bake in a preheated oven at 340°F (170°C) for about 40 minutes (check with a toothpick).

For the cream, beat the mascarpone and cream with the powdered sugar and add the mint syrup.

Cut the completely cooled cake layer in half and cover it with the cream.

Then spread the cream on all sides of the cake and refrigerate for 1-2 hours.

For the glaze, mix the sugar, cocoa, milk and butter and put it on the stove.

Once the mixture boils, remove the pot from the heat, add the chocolate and stir.

Let it cool, cover the cake with this glaze and put it in the refrigerator.

The mint cake is ready. You can decorate the cake as you wish.
