"Rigatoni with cauliflower and feta if you want something really different tonight for dinner."

Ingredients

  • rigatoni - 7 oz (200 g)
  • cauliflower florets - 1.1 lb (500 g)
  • onions - 1 onion
  • carrots - 1
  • olive oil - 5 tbsp.
  • black olives - 2.1 oz (60 g)
  • feta - 7 oz (200 g)
  • garlic - 2 cloves
  • oregano - 2 tsp.
  • paprika - 2 tsp.
  • black pepper - to taste
  • salt - to taste

How to make

Sprinkle the cauliflower with the spices, add 2 tbsp. olive oil and mix.

Transfer it to a baking tray and cook in a preheated oven at 370°F (190°C) for about 20-30 minutes.

During this time, cut the onion into crescents, the carrot into thin strips lengthwise and chop the garlic.

Heat the olive oil in a pan and stew the chopped vegetables.

Add the roasted cauliflower and mix.

Meanwhile, boil the rigatoni in salted water, strain them and transfer them into the pan.

Add the black olives and mix.

Divide the rigatoni with cauliflower into plates and add the Feta cheese on top.
