Ingredients

  • sweet potatoes - 1 large
  • broccoli - 6.4 oz (180 g)
  • spinach - 1.8 oz (50 g)
  • onions - 1
  • garlic - 2 cloves
  • oil - 1 - 2 tbsp.
  • processed cheese - 2.5 oz (70 g)
  • yellow cheese - 3 tbsp. (grated)
  • dried rosemary - 1/2 tsp.
  • savory herb - 1/2 tsp.
  • salt
  • black pepper

How to make

Wash the sweet potato very well, dry it, cut it lengthwise into two halves, wrap them in aluminum foil and bake at 360°F (180°C) for about 40-50 minutes.

Take out the potatoes and let them cool.

Divide the broccoli into florets, blanch them for 5 minutes, strain and finely chop them.

Fry the finely chopped onion, add the chopped garlic and the chopped spinach.

Stir for 2-3 minutes, remove the garlic (optional) and add the processed cheese.

Once the cheese has melted, add the broccoli (leave a few for decoration) and the spices and remove the pan from the heat.

With a spoon, carefully carve out the inside of the sweet potatoes and add that to the pan.

Fill the potato boats with this mixture, sprinkle with the cheese and decorate with the broccoli.

Bake the stuffed sweet potato with broccoli in the oven at 370°F (190°C) for about 20 minutes.
