Ingredients

  • zucchini - 2 lb (1 kg)
  • salt
  • flour - for rolling
  • starch - natural, for rolling
  • eggs - 2
  • oil - 2/5 cup (100 ml) + some for frying
  • water - 1/2 cup
  • vinegar - 1 1/2 tsp
  • green onions - 3 sprigs
  • parsley - 2 tablespoons, crushed

How to make

Clean and dry the zucchini. Cut them into round slices and salt them. Dip each zucchini in equal parts mixed flour and starch and drop them to fry until golden in preheated oil.

Hard-boil the eggs, peel and mash or chop them finely. Mix 2/5 cup (100 ml) oil with the water, vinegar and salt to taste. Add the chopped eggs, crushed onion and parsley. Beat well with a whisk.

If the vinaigrette sauce is too thick, dilute it with a little water or vinegar. Serve the fried zucchini with thus prepared vinaigrette sauce.
