How to make
Cut the pumpkin into small cubes. Pour 3 1/3 tbsp (50 ml) of water and cook for 15-20 minutes, on low heat, then blend it.
Lightly beat the eggs with the sugar. Gradually add the vanilla, milk, pumpkin puree, flour and finally the hot butter.
Stir until you have a smooth mixture for pumpkin pancakes.
Let the mixture sit for 10 minutes and start making the pumpkin pancakes like regular pancakes.
Beat the cream and cottage cheese with a blender or mixer.
Wait for the pancakes to cool before spreading the cream sauce. Sprinkle with powdered sugar if desired.
