How to make
The quinoa is washed and put on the stove with 1 cup of water. When it boils, it is turned off and left covered for 15 minutes on the stove, until all the water is absorbed.
The cauliflower is separated into florets and the tofu is strained and diced. Mix in a bowl and add the spices. Mix well and bake in an oven heated to 390°F (200°C) in a pan lined with baking paper or aluminum foil.
During this time, the oil is heated for the beans. Finely chop the garlic and fry it lightly. The beans are added to it along with the water from the tin. Season with cumin, cayenne pepper, salt and lime juice. Leave it on low heat until thickened, stirring occasionally.
For the tomato sauce, finely chop the tomato and the onion, and finely chop the parsley. Mix them together and squeeze the lime juice over them. Season with salt and black pepper to taste.
The tortillas are spread with hummus, spread some of the quinoa, add some tomato sauce on top, followed by cauliflower and tofu and finally the beans.
Wrap the juicy burrito carefully and tightly.
