How to make
The turkey legs are cleaned and wash very well.
Put them in a deep pot, add the bay leaf and cover them with cold water.
They are put to boil, by periodically skimming.
After they are cooked, take them out and let them cool.
They are deboned, by making sure to remove all small bones.
The meat is grinded in a chopper and put in a bowl in which the mixture will be kneaded.
The fresh cheese is grated and added to the meat.
Add the 4 eggs, mustard, paprika, Pepper Mix, salt and Baharat spice.
The mixture is kneaded very well.
Form small schnitzels, which are rolled in spelt flour, then dipped in beaten eggs.
Fry in hot oil, then leave on kitchen paper to absorb the excess fat.
The Turkish mini turkey schnitzels are served with Turkish salad and simit bread.
