Ingredients

  • carrots - 3 cups, grated
  • eggs - 4
  • oil - 1 1/4 cups
  • sugar - 2 cups
  • flour - 2 cups
  • baking soda - 2 tsp
  • baking powder - 2 tsp
  • cinnamon - 1 tsp
  • salt - 1 tsp
  • nutmeg - 1/2 tsp
  • raisins - 1 cup
  • syrup - 1 cup, corn
  • whipped cream - 1 packet
  • vanilla - 1/2 packet

How to make

Mix the sugar with the eggs and oil and beat with a mixer for 2-3 minutes. Sift the flour 2 times and add it to the mixture. Successively, add the baking powder, baking soda, salt and spices and stir until you get a homogeneous mixture.

Brush a deep baking dish with oil, including the walls, and pour the mixture into it. Preheat the oven to 350°F (175 °C) and bake for 60-70 minutes. Having baked the layer, allow it to cool and prepare the cream. Successively, mix the sugar, whipped cream, corn syrup, grated carrots and finally the vanilla.

Stir well and let the ingredients become homogeneous. 2 minutes are enough time for this, then thoroughly smear it on the cooled layer.

Decorate with strips of raw carrots and raisins.
