"Here is what a wonderful cake you can make with plums"

Ingredients

  • eggs - 3 large
  • sugar - 1 cup
  • oil - 1/2 cup
  • yogurt - 1 cup
  • baking soda - 1 tsp. /no tip/
  • vanilla - 1 tsp.
  • flour - 2 cups /270 g/ no tip, not full
  • plums - 1.5 lb (700 g) washed, dried and divided into two halves
  • butter - 1 tsp. for greasing the baking pan

1/2 cup has a capacity of 100 ml.

1 cup has a capacity of 240 ml

I washed the plums, dried them and cut them into two halves. It is important that they are neither too ripe nor too hard.

In a bowl, I mixed the sugar, eggs and vanilla and beat with a mixer until they increased in volume. Then I gradually added the oil, while stirring.

I mixed the yogurt with the soda and let it activate well.

Then I added it to the mixture and gave it a final stir with a mixer.

I sifted the flour and added it, while stirring with a spatula.

It is important to observe the amount of flour, because if more is added, the fruit cake will not be so fluffy.

I greased a 12.5x10″ (32x25 cm) pan with butter and lightly sprinkled it with flour. I poured the plum cake mixture into it and arranged the plum halves open side up on top.

I put the cake to bake in a well-heated oven at 320°F (160°C) for about 30 minutes or until fully baked. I sprinkled it with powdered sugar.

It is preferable to bake the delicious plum cake in a larger baking pan, because this way you will get a more even ratio between the fruit and cake parts.
