How to make
Grind the crystal sugar along with the lemon peels to get powdered sugar. We can also do this in a coffee grinder or another suitable device that we have.
Add the sifted flour, a pinch of salt, a pinch of baking powder and finally the egg and butter in pieces. Beat everything in a blender for 20 seconds and until a smooth dough is obtained. If you do it by hand, add soft or melted butter. Then the dough for the butter biscuits will become softer and stickier, but in any case, we will let it set in the refrigerator.
We wrap the finished butter dough in cling film and store it for 1 hour in the refrigerator or 15-20 minutes in the freezer (depending on how soft it is).
From the hardened dough, make small, slightly flattened balls and arrange them in the oven tray. One dose is exactly the amount that is made. If you want to make a larger quantity of the delicious biscuits, then double the products.
We make small holes in the middle of the shaped biscuits and put a little jam inside.
Bake at 320°F (160°C) for 12 minutes if you want the biscuits to be whiter and softer. Bake for about 15-16 minutes for crispier and lightly browned ones.
It all depends on their size, so keep an eye on them.
Serve the perfect homemade biscuits for coffee with a nice cup of coffee.
