Ingredients

  • flour - 2 cups
  • baking powder - 1 tbsp (10 g)
  • eggs - 3
  • sugar - 1 cup
  • milk - 5.1 fl oz (150 ml)
  • mint liqueur - 3 1/3 tbsp (50 ml)
  • lemons - 1 peel
  • fresh mint leaves - 10
  • oil - 3 1/3 tbsp (50 ml)

How to make

Sift the flour with the baking powder. Beat the eggs along with the oil, sugar, milk and mint liqueur.

Add the finely chopped mint leaves and grated lemon peel.

Stir the mixture well. Transfer it into pre-greased muffin tins and bake until done in an oven heated to 360°F (180°C).
