How to make
First, clean the duck, remove the giblets, and finely chop them.
Heat oil in a pan and fry the duck giblets along with the chopped onion. Shortly after, add the grated carrot and chopped mushrooms, sprinkle with paprika and salt.
Cook until the mushrooms are soft and pour the rice. Continue stewing until the grains become transparent. Remove from the heat and sprinkle with chopped parsley.
Stuff the duck with this stuffing and carefully sew it up.
Make a mixture with a little olive oil and paprika, coat the duck and arrange lemon slices on it.
Cover the tray with foil and turn on the oven and set it to 360°F (180°C).
Bake the duck for about 100 minutes, then remove the foil and finish baking until nicely browned.
The stuffed duck with rice and giblets is ready.
