In a bowl, beat the eggs, milk, crushed almonds and coconut shavings. Add the vanilla and stir the pancake mix.
Heat oil in a flat pan and pour enough of the liquid thinly to cover the entire bottom. Repeat until the mixture is used up.
For the cream, combine the banana, frozen fruit and honey in a blender and blend until smooth.
Spread the pancakes with the cream and roll them up. Add more of the fruit cream on top and sprinkle with powdered sugar.
