How to make
Knead a smooth dough from the sifted flour along with the salt, oil and water. Roll it out into a thin crust and put it on a tray lined with baking paper.
Mix the cream with a little milk and spread it on the dough. Add sliced bacon and onion crescents on top. Sprinkle with freshly ground black pepper and some rosemary leaves.
Put the Tarte Flambée to bake for about 15-20 minutes in a very well heated oven. The tart should acquire a light dark color, to live up to its name (from French: Caught by fire).
Serve the finished tart immediately, sprinkled with fresh rosemary along with white wine (Riesling). In Germany this recipe is known as Flammekueche (Flammkuchen).
