Caramelize 1/5 cup (60 g) of sugar, pour in boiling milk and boil until the sugar dissolves. Add the remaining sugar and a pinch of salt.
Whip the egg yolks and flour into the cream and pour them in with the milk, while constantly stirring. Remove the mixture from the heat and beat until cool.
Add the egg whites that you've beaten to snow. Serve the cream with vanilla or almond sauce.
