How to make
Mix the milk and water. Warm them slightly and dissolve the yeast and sugar in them.
Cover the bowl with a towel and leave it for 10 minutes until the yeast is activated.
Sift 10.5 oz (300 g) of the flour into a bowl and add the salt. Stir and make a well.
Add the yeast and oil mixture and mix.
Sift the remaining flour on the counter and knead the dough. Do not add more flour.
Grease a bowl and put the dough inside. Cover it with a towel or cling film and leave it to rise until it has doubled in size.
Once the dough is ready, knead it on a lightly floured surface just enough to get the air out.
On a sheet of baking paper, roll out the dough into a circle. Transfer it along with the paper into a tray. With your fingers, form a border two centimeters from the edge.
Again, use your fingers to shape the inner lines, first in one direction, then in the other. The goal is to get something like a grid. You can also use the pizza knife, but don't cut through.
Leave it to rise again for 20 minutes.
Mix 1 egg yolk with half a tablespoon of oil, sour cream and milk. Spread the Turkish bread with this mixture. Sprinkle with white and black sesame seeds.
Bake the flatbread at 390°F (200°C) for 20 minutes until it acquires a golden color.
