Ingredients

  • green tomatoes - 6 - 11 lb (3 - 5 kg) according to the barrel
  • green peppers - 10 pcs. (optional)
  • celery - 1 bunch
  • horseradish - 1 root
  • mustard 1 tsp.
  • water - 2.6 gal (10 l)
  • coarse salt - 0.9 lb (400 g)

How to make

Wash the tomatoes and peppers very well. If you just put tomatoes in a barrel, you won't like it, they have no flavor, so add peppers - they add flavor and that's how the tomatoes get the pickle flavor.

Pierce each tomato with a fork in 2-3 places and cut the peppers at the top.

Fill the barrel with the tomatoes and peppers and sprinkle with mustard on top, cover with horseradish and celery.

Prepare your brine by pouring a 10-liter tube of water into a large container and weigh out 400 g of salt. Stir until the salt is dissolved, strain and pour into the barrel, it should cover the vegetables.

Press down with a weight or vine sticks, close with a lid and after a few days you can start straining the liquid and pouring it back in - once a day.
