Clean the cabbage and tear off the outer cabbage leaves. Remove the root and fill with salt. Cut the root deeply. Cut some cabbage into quarters, which you will need to fill the holes with.
Arrange the heads of cabbage in the barrel and place the quarters between the empty spaces. Place the horseradish pieces between the cabbage.
Pour water over the cabbage and press down with a stone or a jar filled with 6 cups (1.5 liters) of water.
Check daily if you need to make more brine.
The sauerkraut with horseradish is ready.
