"Not just an omelette - a super omelette with potatoes, mushrooms and fresh tomatoes - the breakfast of champions."

Ingredients

  • potatoes - 2 - 3 boiled
  • eggs - 4
  • feta cheese - 3.5 oz (100 g)
  • mushrooms - 2 champignons
  • onions - 2 sprigs fresh
  • parsley - 2 - 3 sprigs
  • for the garnish
  • tomatoes - 1
  • feta cheese - 2 oz (50 g)

How to make

Mash the potatoes into a puree. Add the eggs to it and stir until homogenized. Add the onion and parsley to it, finely chopped. If the mixture is too thick, you can add a little milk. Add crumbled feta cheese, some salt and other spices to taste.

Fry the mushrooms with butter in a pan. Pour the potato-egg mixture over them and fry it briefly. Flip it using a plate and fry the other side.

Optionally, you can grate a little feta cheese on the side you intend to serve. Serve the omelette with a tomato and feta cheese.
