How to make
Start making this Armenian bread by heating 4.2 fl oz (125 ml) of water and dissolving the yeast inside along with 2 tbsp. flour and sugar. Stir, cover with foil and set it aside.
Sift the flour into a bowl, add the salt to it and make a hole in the middle. Pour the yeast and the remaining water there. Knead a smooth bread dough.
Transfer into a greased bowl and cover with cling film. Leave it to rise in a warm place for 60 minutes.
Spread out a sheet of baking paper and put the flatbread dough on it. Pull it from the middle to the end, by pressing with your hands. This will give it an oval shape.
You will find it easier to shape this fluffy bread by greasing your hands in a mixture of oil, egg white, salt and a little water.
Press two fingers on the inside edges to draw a circle, then make lines inside it. Leave it for 20 minutes.
Bake the traditional Armenian flatbread for half an hour at 390°F (200°C) in an oven with a bowl of water.
