"Who would have guessed that the most delicious filo pastry pie in the world is actually not with white cheese, but with ham and cheese"

Ingredients

  • fine filo pastry sheets - 9 oz (250 g)
  • oil - about 1/2 cup
  • cheese - 7 oz (200 g) grated
  • ham - 8 oz (225 g) thin slices
  • eggs - 3 pcs.
  • yolks - 1 pc. for spreading
  • salt - 1 pinch
  • black pepper - 2 pinches

How to make

Beat the three eggs with a pinch of salt and black pepper. Add the oil and grated cheese to them. You may save some of it for sprinkling the filo pastry pie with and add more as a quantity if you like.

Spread out the filo pastry sheets on the kitchen counter and spread the cheese filling evenly. Place two to three or up to four slices of ham on top, depending on their size. The ham must be thin, the other option is to cut it into very small pieces. Roll the sheets two at a time and arrange them in a snail shape in a small 80°F (24 cm) diameter greased baking pan.

After the filo pastry pie is shaped, spread it with a yolk beaten with a few drops of oil and water. Sprinkle with cheese and bake until golden in an oven heated to 360°F (180°C).

Eat the twisted filo pastry warm, it's nicer that way and the cheese also stretches beautifully and is soft.

You can serve it both for breakfast with a glass of ayran, as well as for lunch or dinner.
