How to make
Beat the cream with a mixer until stiff peaks are obtained.
In another bowl, mix the mascarpone, rum essence and powdered sugar.
Mix until you get a smooth cream. If you like sweeter desserts, add a little more sugar.
Cut half the apricots into small pieces. Leave the other half for decoration.
Mix the mascarpone and the whipped cream. Stir gently with a spatula.
Break the biscuits into small pieces. Add them along with the chopped apricots to the cream. Stir.
Prepare 6 dessert cups. At the bottom of each, put an apricot, cut into several pieces. Put the cream on top of them. Finish off with a few slices of apricots.
Cover the glasses with cling film and place the fruit cream in the refrigerator for a few hours.
The mascarpone cream with apricots is ready.
