How to make
Pour the rice into a bowl of cold water, wash it well and strain it.
Then put it in a pot and pour about 500 ml of water.
Add a teaspoon of salt and mix well. Cover with the lid and boil for about 15 minutes.
Remove it from the heat and leave it for a few minutes.
Heat the vinegar and sugar in a small pot, until a thick liquid is obtained.
Add it to the rice and mix well. Then soak the rice in a wet towel.
The marinated herring is strained from the liquid and the skin is peeled off. Peel the skin of the cucumber and cut it into long strips to make sticks.
Place a nori sheet on a bamboo mat (you can also use cling film) and cover it with a layer of rice, flattening it with wet palms.
Spread with cream cheese, put a few sticks of cucumber and some of the pickled ginger and then the strained fish strips.
Roll up the sheet, so that it forms a tight and regular cylinder and leave it in the refrigerator.
Do the same with the remaining nori seaweed sheets.
Cut the homemade sushi.
Serve the herring sushi with soy sauce and marinated ginger.
