How to make
Clean the bluefish from the entrails and scales. Wash it under running water. Season it with salt on all sides. Leave the fish for about 30 minutes to absorb the salt.
Wash the fish again and dry it with paper towels.
Heat the oil in a deep pan.
Roll each fish in corn flour, tap off the excess and fry until golden on both sides. Drain the fish again on kitchen paper to remove excess fat.
Serve it with lemon slices and an appropriate garnish.
