How to make
I wash the bulgur and boil it for about 15 minutes in salted water. I strain it.
I stew the chopped onion, garlic and sliced mushrooms in a pan with fat. As they soften, I add the vegetable mix. After them it's time for the zucchini, which are cut into small cubes. Sprinkle with a little paprika.
Peel the tomatoes, cut them into cubes and add them to the baking pan along with the chopped parsley.
Season with Himalayan salt and black pepper. Remove from the heat and transfer the vegetable mixture and cooked bulgur into a baking pan.
I mix well. Cover with aluminum foil and put it in a preheated oven for 10 minutes, enough to assemble and finish cooking the dish.
I serve the finished dish shaped with the help of a bowl.
The bulgur with mushrooms and vegetables can be garnished with grated cheese and on the side with green salad if you like.
