How to make

This is an original recipe from the Epirus region, near Athens. In every small village, where there are no tourists, but only peace and quiet, there is always the local small pub, tavern. One always visits such places and tries traditional Greek dishes such as this Tirokafteri recipe, extremely delicious and spicy spread that cannot be resisted.

The base is Feta cheese and most of all the Greek hot pepper equivalent to jalapeño. It is extremely spicy. I will show it in the photo gallery. It is difficult to find, but you can buy it from a Greek vegetable store, it is not available in the store chains.

When preparing the recipe, it is recommended to work with gloves, because of the spiciness, which is difficult to wash off the fingers.

In a blender put the hot pepper, cut into pieces, the red pepper, it is for color, the small clove of garlic, it is only for aroma, not so much for taste and grind into a paste. Add olive oil, grind again. In a large bowl, crumble the cheese with a fork, almost to a paste, but it should have a grainy structure.

Add yogurt, vinegar, mix. Adding a spoonful of vinegar will enhance the flavors of the Tirokafteri paste. Pour the mixture from the blender, mix. Add the chili flakes, two or three pinches of oregano. Mix until a homogeneous mixture is obtained.

It is poured into a suitable plate, drizzled with olive oil and a few fresh chopped oregano leaves are added.

It is served with toast and it is generously spread on it.
